EASY GLUTEN-FREE GREEK-INSPIRED CHICKEN KEBABS
These are a great alternative to the standard chicken breast dinner. I served them over Greek Salad and rice with tzatziki on the side. Yum! Who doesn’t love food on a stick? These are high in protein, low in carbs and super delicious.
Time Required: 30 minutes
Soak wooden skewers in water with 2 tbsp. lemon juice for at least 30 minutes. Alternatively, this can be done in advance.
Pre-heat oven to 400F
Grease a cookie sheet.
Cut chicken into 1/2 ” cubes and put into a large freezer bag.
Add mustard, seasoning, garlic, and remaining lemon juice.
Shake until chicken is well coated.
Slide chicken onto skewers and place on cookie sheet.
Bake for 18 minutes, turning halfway through.
Serve or save for leftovers.
