Triathlete candy. Summer squash is a great way to fill your vegan, paleo, plate with delicious carbs that aren’t rice or pasta.

Ingredients:patty pan

– 1 tbsp coconut oil*
– 1 tbsp olive oil*
– 4 small patty pan squash*, sliced
– 1 medium zucchini, sliced*
– 1 small slice onion*
– 1/2 red pepper, sliced
– 4-5 sprigs fresh thyme*
– salt and pepperDirections:

– Melt and mix oils over medium heat
– Break up the onion slice into single rounds as its added to the pan and saute till translucent, stirring occasionally,
– Increase heat to medium high, and add squash and pepper, placing squash directly onto the pan bottom, bringing onion to the top.
– Turn the squash periodically to cook evenly, rotating the layers
– Strip the leaves off the thyme sprigs with a thumb a forefinger and drop it all (twigs and everything) into the pan
– Salt and pepper to taste. vega
