
IN PRAISE OF THE HUMBLE RUTABAGA
If you’ve been following this blog for any length of time, you may have noticed that I have a particular fondness for rutabaga. Also known as Swedish turnip or yellow turnip, the rutabaga is a mild-flavoured non-starchy alternative to potatoes. It’s also an inexpensive alternative to yam. Basically any way that you can cook a potato, you can cook a rutabaga. I also enjoy munching on them raw (like carrots) either plain, or dipped in hummus. Below is a quick and easy recipe to add this dish to any meal.
Time Required: 20 mins
Level: Easy
Serves: 4
Ingredients:
1 large or 2 medium rutabagas*
Method:
– Cut rutabaga into 1/2″ cubes.
– Cover with water in a saucepan.
– Cook until soft
– Mash by hand, or whip with mixer
– Enjoy!
