GREEK SALAD

Another salad for people who don’t like salad. This one makes a quick lunch, or a great side.

Time Required: 5 minutes
Level: Easy
Serves: 2

– 1/2 English Cucumber, diced
– 2 Tomatoes*, diced
– 1/8 Red Onion, diced
– 1 tbsp. feta cheese* (crumbled)
– 10 black olives, sliced with pits removed
– Balsamic Vinegar (to taste)
– Extra Virgin Olive oil (to taste)
– 1/2 lemon (for garnish)
– Salt and Pepper (to taste)

Method:

– Toss cucumber, tomato, onion, feta, olives, salt and pepper in a bowl to mix.
– Add oil and vinegar separately, in case there are leftovers
