BROCCOLI SALAD – FOR PEOPLE THAT DON’T LIKE SALAD

This one was inspired by my friend Jessica. It’s fun because you can toss in whatever leftover veggies you have in the fridge (I used beets for example.) Get creative and have fun!

Time Required: 15 minutese

Level: Easy
Serves: 6

Ingredients:
4 lbs. broccoli*, cut into chunks with stems removed
2 small beets*, boiled and sliced
1 pepper*, diced
2 avocados* sliced
Juice of 1 orange*
1/8 cup oilve oil*
1/4 cup goats milk feta (optional)
1/4 cup cashews (optional)
kosher salt*
black pepper*

 

Directions:
– Steam broccoli for 5-ish minutes until slightly soft
– Toss all ingredients into large bowl
– Mix and serve with salt and pepper as desiredspud coupon 3
